Hi, I’m Julio Arco, founder of Vegan & Plant-Based Kitchen, and someone who has been living a plant-based lifestyle since 2010. This blog is a personal project born from my own journey toward health, sustainability, and conscious living—and it’s one piece of a much bigger picture that reflects who I am and what I value.


A Journey That Started with Purpose

Over a decade ago, a close family member’s illness sparked a deep reexamination of how I was living—especially when it came to what I was eating. I began to question the role of food in our health, our environment, and our impact on other living beings. As I immersed myself in research, I quickly discovered the transformative power of a plant-based diet—not just physically, but emotionally and ethically.

In 2010, I made the choice to fully embrace a vegan lifestyle. It was a decision that reshaped my habits, my creativity, and eventually, my career. As I explored the variety and vibrancy of plant-based cooking, my kitchen became a space for experimentation, discovery, and joy. Vegan & Plant-Based Kitchen grew out of that process—it’s my way of sharing the recipes, tips, and experiences that have shaped my life ever since.
